Wacky Fried Chicken Sandwich Difficulty: Hard
Ingredients:
Large chicken thigh (one per sandwich)
Flour
1 egg
Panko breadcrumbs
Brioche bun
Pickles (optional)
Coleslaw mix (optional)
Ranch
WACKY SAUCE
Instructions:
Coat chicken thighs in bread crumbs via below process.
Fill three bowls, one with flour, one with battered egg and one with panko breadcrumbs (add paprika, garlic powder and cayenne to panko if you’re feeling wild)
Fully coat chicken thigh in flour.
Fully coat chicken thigh in egg.
Fully coat chicken thigh in panko bread crumbs.
Once thighs are fully coated, fill a large pan wth ½ inch of canola oil and turn on high.
Once oil is brought to a boil, add breaded chicken and fry until bottom is crisp and golden brown.
Chip Tip - Test to see if oil is hot enough to fry by throwing a breadcrumb into the oil. If the breadcrumb sizzles and rises to the top, your oil is hot enough to fry. If it it does not sizzle and sinks to the bottom, the oil needs to get hotter.
Once bottom is crisp and brown, flip chicken and cook the other side. Once cooked, remove from pan and let soak on a plate covered in paper towel.
In a small bowl, mix ranch and WACKY SAUCE to your liking. Add layer of WACKY RANCH to the bottom bun.
Add coleslaw mix and pickles.
Chip tip - I personally go light on coleslaw and do not add mayo. This step is more for texture than it is for taste.
Add chicken and ENJOY!
